Masa is nixtamalized, ground and shaped here — not purchased. All done by hand with no machinery other than a molino.
03 — The Season
Nature
writes
the
menu.
We carry no printed food menu. Our team ask what you don’t eat , then let the season answer. Based on a rotating menu of how the cooks are able to interpret their own feelings and memories onto dishes.
04 — The Table
Strangers
become
community.
There are no private tables here. You sit alongside others — neighbours, travellers, regulars — at long communal tables.
